<section>Sugar and fat are two distinct nutritional properties. Sugar, or glucose, is the main source of energy for the body, with the other being protein. You can ingest glucose directly, or the body can synthesize glucose from most carbohydrates, including <a id="itxthook1" href="http://www.livestrong.com/article/408673-does-sugar-turn-into-fat/#" rel="nofollow">simple</a> sugars and starch. Fat, on the other hand, appears as lipids in food in the form of oils, like fish oil and vegetable oil, and hydrogenated oils, such as fat, lard and cholesterol. Fat in the body that contributes to unhealthy weight gain and obesity results from fatty acid stored in adipose tissue.</p>

<h2>Metabolism</h2>
<p>Metabolism refers to every system and process that contributes to deriving or utilizing energy in the body. It includes the circulatory, cardiovascular, respiratory and digestive systems. Most relevant to the conversion of sugar into fat, though, is metabolism as it relates to the digestive tract. When food enters the body, several enzymes beginning with saliva and ending with hydrochloric acid in the stomach break it down to its constituent parts so the body can use them separately. These parts can be divided diametrically as nutrients and wastes. Of the nutrients extracted from food, carbohydrates contribute most to energy. To use carbohydrates as energy, the body converts them into glucose, a sugar, as part of the metabolic process. The body does one of three things with this glucose; it causes bodily cells to absorb it for immediate use by releasing <a id="itxthook2" href="http://www.livestrong.com/article/408673-does-sugar-turn-into-fat/#" rel="nofollow">insulin</a>, it causes bodily cells to absorb it for later use by converting it to glycogen or causes the liver and adipose cells to absorb it for storage by converting it to fatty acid.</p>

<h2>Complex Carbohydrates</h2>
<p>The metabolic process from carbohydrate to fat differs depending on the type of carbohydrate, the largest distinction being between simple and complex carbohydrates. Complex carbohydrates ultimately yield less fat as they require a more complex metabolic process to completely digest. In fact, one complex carbohydrate, fiber, is entirely indigestible and will not cause the body to produce glucose, although a type called soluble fiber can help moderate glucose derived from other foods. Another type of complex carbohydrate is starch. Complex carbohydrates differ from simple carbohydrates, because they are compounds that comprise chains of three or more types of sugar molecules.</p>

<h2>Simple Carbohydrates</h2>
<p>Simple sugars comprise bonds between one or two sugar molecule types. Examples include fructose; glucose; sucrose, which is a bond between glucose and fructose; high-fructose corn syrup, which is also a bond between glucose and fructose; lactose, which is a bond between glucose and galactose; and others. Simple sugars convert into glucose almost immediately, often containing readily-available glucose, which can raise blood glucose levels much more sharply, causing large amounts of excess. Moreover, simple sugars most often occur in foods as additives, increasing the caloric value of a meal without increasing its nutrition.</p>

<h2>Bottom Line</h2>
<p>Most fat produced by the body is due to conversion of excess glucose into fatty acid. In this way, the body does turn sugar into fat as part of the metabolic process when excess sugar is present. However, several thresholds much breach before this conversion takes place. Cells must first absorb glucose to capacity for immediate use, then muscles must absorb glycogen to capacity for later use. Only then will the body resort to converting glucose into fatty acid for storage in adipose tissue, if blood glucose levels remain too high.</p>
<p>On the other hand, &#8220;sugar&#8221; as it relates to sucrose, or table sugar, can initiate this process much more readily. Sucrose and other simple sugars can cause rises in blood glucose levels that require the full gamut of conversions to lower them quickly enough to prevent damage. Inordinately high glucose levels can cause hyperactivity, weight gain, diabetes, brain damage, nerve damage, liver damage and renal damage, among other <a id="itxthook3" href="http://www.livestrong.com/article/408673-does-sugar-turn-into-fat/#" rel="nofollow">health</a> complications.</p>

				<content:encoded><![CDATA[<p>%%BLOGDESLINK%%</p><p>Bad cholesterol, depression, high blood pressure; these are all conditions that often prompt a trip to the pharmacy. But now, physicians are administering a different treatment entirely: <strong>produce</strong>. Doctors at select clinics across the country are writing some obese patients &#8220;prescriptions&#8221; for fruits and vegetables.</p>
<p>The <a href="http://wholesomewave.org/fvrx/" target="_blank">Fruit and Vegetable Prescription Program</a> provides daily $1 subsidies to buy produce at local farmers markets. FVRx, as it is also known, is funded through<a href="http://eatocracy.cnn.com/2010/10/11/a-new-wave-of-relief-for-gulf-coast-fishing-families/" target="_blank">Wholesome Wave</a>, a non-profit organization which operates from private donations. Each member of a family gets the $1 prescription so, for example, a family of five would end up getting $35 per week to spend on fresh fruits and vegetables.</p>
<p>Janet Lopez is a cashier at a sporting goods store and lives in Washington, D.C. with her two children, brother and mother. She and her family are part of the <a href="http://www.unityhealthcare.org/" target="_blank">Unity Health Care</a> clinic&#8217;s prescription program and have been buying the subsidized produce since May. She said they all have been eating more fruits and vegetables because of the program.</p>
<p>“It is an encouragement because now I actually see that my kids love all of this stuff and before I couldn’t get it because it wasn’t cheap. Not only that but I also didn’t know how healthy it actually is,” Lopez said.</p>
<p>In addition to subsidies, FVRx has patients meet with their physicians to check up on their health including their height, weight, blood pressure and body mass index. The program also offers exercise and cooking classes.</p>
<p>“A lot of kids are picking up on how to eat vegetables and realizing they’re not actually yucky, it’s actually, ‘Oh, it’s delicious,’ because they’re learning to cook it themselves,” Lopez said.</p>
<p>And organizers said they use this family oriented approach because even if the whole family isn’t obese, they don’t want one member of the family eating fruits and vegetables while the rest just keep eating junk.</p>
<p>“When we look at these types of health interventions they’re really most successful if the entire family can make a lifestyle change rather than cherry picking who in the family can eat more fruits and vegetables while the rest of the people sit at the table and eat instant rice with a can of condensed soup stirred in,” said Michel Nischan, CEO of <a href="http://wholesomewave.org/" target="_blank">Wholesome Wave</a>.</p>
<p>The program exists at twelve sites in seven states and the District of Columbia. It started in 2010 and has already helped over 1000 people buy healthier food.</p>
<p>The program targets areas where fresh produce may not be readily available or is too expensive for impoverished families. The high price ends up being a double bind; people don’t buy the produce because the price is so high and stores don’t buy large quantities of produce because people don’t buy as much, thus increasing the price.</p>
<p>“Fruit and vegetable producers don’t receive any subsidies right now. It’s corn, cotton, rice, wheat and soy. So fruits and vegetables, the things we’re supposed to be eating five servings a day of are the foods that receive little to no government support,” Nischan said.</p>
<p>Nischan said this program ultimately produces a savings for the health care system because he believes if people eat more healthily, they’re less likely to suffer from chronic conditions. Healthy food costs less than the medicine and treatment they would require in the future.</p>
<p>“If you advise somebody to change to see a nutritionist to change their diet, they skip the nutritionist visit. You don’t see them again for two years until their feet hurt really bad and they’ve been vomiting for three weeks and they can’t understand because they don’t have the flu and they go back to find they have Type-II Diabetes for over a year,” Nischan said. “Now we can give them free drugs because our society won’t allow someone to die (but) the drugs are more expensive than the food.”</p>
<p>Though the program in D.C. is new, people like Lopez are already noticing a difference in their lives. &#8220;I feel more energetic,&#8221; she said. &#8220;I don’t feel as tired anymore and I see the same thing in my kids.”</p>

<p>A well-chosen array of practitioners and their vastly improved patients, whose issues include chronic pain, frozen shoulder syndrome, <a id="HEDAI0000030" title="Multiple Sclerosis" href="http://www.latimes.com/topic/health/diseases-illnesses/multiple-sclerosis-HEDAI0000030.topic">multiple sclerosis</a>, <a id="HEDAI0000028" title="Lyme Disease" href="http://www.latimes.com/topic/health/diseases-illnesses/lyme-disease-HEDAI0000028.topic">Lyme disease</a>, <a id="HEBEC00003" title="Autism" href="http://www.latimes.com/topic/health/behavioral-conditions/autism-HEBEC00003.topic">autism</a>and <a id="HEDAI0000010" title="Cancer" href="http://www.latimes.com/topic/health/diseases-illnesses/cancer-HEDAI0000010.topic">cancer</a>, offer enlightening testimony on behalf of chiropractic treatment.</p>
<p>The movie expands into a discussion of diet and exercise and their importance to physical health. No matter how often these points are stressed in any forum, it never ceases to convince with their simplicity (&#8220;Walk 30 minutes, five times a week!&#8221; &#8220;Eat whole foods!&#8221;).</p>
<p>Several farmers also weigh in on organic produce versus genetically modified foods.</p>
<p>The film also argues that child <a id="HEDAR00000154" title="Vaccines" href="http://www.latimes.com/topic/health/vaccines-HEDAR00000154.topic">vaccines</a> can be dangerous and that many <a id="HEDAR00000155" title="Prescription Drugs" href="http://www.latimes.com/topic/health/drugs-medicines/prescription-drugs-HEDAR00000155.topic">prescription drugs</a> pedaled by physicians often thought to be in sync with greedy Big Pharma are potentially addictive.</p>
<p>&#8220;Doctored&#8221; is an involving, well-crafted, humane look at a topic that stands to affect us all.</p>

<p>Florida&#8217;s numbers reflect a troubling national trend toward more obesity-related disease, said Michelle Larkin, assistant vice president and deputy director of the foundation&#8217;s health group.</p>
<p>&#8220;I don&#8217;t think we could have ever imagined it. … We can&#8217;t have a thriving nation without healthy people,&#8221; she said.</p>
<p>Tuesday&#8217;s report reflects familiar themes. Southern states such as Mississippi and Louisiana continue to be heaviest. Colorado exemplifies the more active and less obese states.</p>
<p>Florida, ranking 18th overall, has slowed but not stopped a steady climb in its obesity rates.</p>
<p>The Centers for Disease Control and Prevention defines obesity as an adult with a body mass index above 30. So, for example, most 5-foot-10 adults weighing 210 pounds would fall in the low end of the obesity scale.</p>
<p>The forecast points to the long-term medical ramifications of letting status quo efforts fight the nation&#8217;s expanding waistline. Florida, one of 39 states where more than half of the adults were obese in 2011, would by 2030 add 2.4 million cases of Type 2 diabetes and 6.2 million more cases of coronary heart disease and stroke.</p>
<p>The increases are significant financially. Americans would see annual obesity-related medical expenses increase by $48 billion to $66 billion a year in 2030, said Jeff Levi, the trust&#8217;s executive director. Today, $147 billion to $210 billion is spent annually on obesity-related medical care.</p>
<p>Florida, with an older base population, would experience one of the nation&#8217;s smallest cost increases, the forecast said. But that doesn&#8217;t minimize the growing number of people facing the complications of obesity-related illness, Levi said.</p>
<p>&#8220;You&#8217;re still talking about a more than doubling of obesity rates in Florida,&#8221; he said.</p>
<p>The report argues that a 5 percent drop in BMI rates could trigger significant improvements. For example, nearly 502,000 fewer Floridians would be diagnosed with Type 2 diabetes and 465,000 adults would be spared from heart disease and stroke.</p>
<p>There isn&#8217;t a single &#8220;silver bullet&#8221; for reducing obesity rates, Larkin said. Instead, the report highlights several local examples of how government, faith-based or private groups can change behaviors.</p>
<p>The cafeteria team of Sexton Elementary School in St. Petersburg saw results from switching ice cream for fat-free yogurt and sugary popsicles for 100-percent fruit pops. Members of a Palm Harbor Seventh-day Adventist church rallied when challenged to sign up for 5-kilometer walks and half-marathon races.</p>
<p>These efforts attack obesity in myriad ways, some with better success than others, Levi said.</p>
<p>&#8220;It&#8217;s an experiment, and we will be watching to see what works,&#8221; he said.</p>

<p>Davis said that the wheat we eat these days isn&#8217;t the wheat your grandma had: &#8220;It&#8217;s an 18-inch tall plant created by genetic research in the &#8217;60s and &#8217;70s,&#8221; he said on &#8220;CBS This Morning.&#8221; &#8220;This thing has many new features nobody told you about, such as there&#8217;s a new protein in this thing called gliadin. It&#8217;s not gluten. I&#8217;m not addressing people with gluten sensitivities and celiac disease. I&#8217;m talking about everybody else because everybody else is susceptible to the gliadin protein that is an opiate. This thing binds into the opiate receptors in your brain and in most people stimulates appetite, such that we consume 440 more calories per day, 365 days per year.&#8221;</p>
<p>Asked if the farming industry could change back to the grain it formerly produced, Davis said it could, but it would not be economically feasible because it yields less per acre. However, Davis said a movement has begun with people turning away from wheat &#8211; and dropping substantial weight.</p>
<p>&#8220;If three people lost eight pounds, big deal,&#8221; he said. &#8220;But we&#8217;re seeing hundreds of thousands of people losing 30, 80, 150 pounds. Diabetics become no longer diabetic; people with arthritis having dramatic relief. People losing leg swelling, acid reflux, irritable bowel syndrome, depression, and on and on every day.&#8221;</p>
<p>To avoid these wheat-oriented products, Davis suggests eating &#8220;real food,&#8221; such as avocados, olives, olive oil, meats, and vegetables. &#8220;(It&#8217;s) the stuff that is least likely to have been changed by agribusiness,&#8221; he said. &#8220;Certainly not grains. When I say grains, of course, over 90 percent of all grains we eat will be wheat, it&#8217;s not barley&#8230; or flax. It&#8217;s going to be wheat.</p>
<p>&#8220;It&#8217;s really a wheat issue.&#8221;</p>
<p>Some health resources, such as the Mayo Clinic, advocate a more balanced diet that does include wheat. But Davis said on &#8220;CTM&#8221; they&#8217;re just offering a poor alternative.</p>
<p>&#8220;All that literature says is to replace something bad, white enriched products with something less bad, whole grains, and there&#8217;s an apparent health benefit &#8211; &#8216;Let&#8217;s eat a whole bunch of less bad things.&#8217; So I take&#8230;unfiltered cigarettes and replace with Salem filtered cigarettes, you should smoke the Salems. That&#8217;s the logic of nutrition, it&#8217;s a deeply flawed logic. What if I take it to the next level, and we say, &#8216;Let&#8217;s eliminate all grains,&#8217; what happens then?</p>
<p>&#8220;That&#8217;s when you see, not improvements in health, that&#8217;s when you see transformations in health.&#8221;</p>
